At P.O.S.H. we aim to embrace the tradition of the food that we cook. By respecting the origins of each dish, whether it is Indian or Colonial. Using the freshest vegetables and fish, the leanest meat, all cooked in cholesterol free oil. With less salt, artificial colouring and flavours we hope that it is not only a wonderful experience, but healthier too!

History:

The passage to India.

P.O.S.H. - Up to the 1940's the standard mode of travel to India was by sea. Wealthy passengers traveled on the PORT side of the ship going out and the STARBOARD home. Traveling P.O.S.H. (Port Out Starboard Home) and so avoiding the worst heat of the sun.
The voyage The Voyage - P&O was the British line departing from Tilbury or Southampton to Bombay. In 1869 the Suez Canal was opened. This shortened the voyage from 6 months to less than 4 weeks. Encouraging far more wives and families to make the trip.
Memsahibs were the wives of the soldiers. The Memsahibs - The Memsahibs, were the wives or brides to be of the traders, soldiers or civil servants. For these woman India was a very alien land. A rather solitary life and the management of a large household of servants awaited them.
The Indian cook. The Cook - The relationship between the cook and the Memsahibs was often very difficult. The Memsahibs tried to introduce their English cuisine. With the lack of knowledge and English ingredients the cooks efforts, were at first, quite disastrous!.
However, they soon both learned to adapt to each others ways. Finally, the combination of English and Indian food was born and the creation of many wonderful dishes.
